Baked Mac and Cheese

My recipe was asked for, so here it is (note, I didn’t invent this recipe, but I don’t want to reveal its source lest I have to pay them for royalties and whatnot)

1 1/2 cupts uncooked macaroni
1 cup breadcrumbs (we use a blender and some stale or microwaved bread)
1/2 cup grated parmesean cheese
2 tbsp butter, melted
1 pound sharp cheddar cheese, grated
1/2 stick butter, melted
2 eggs, beaten
1 cup mlk

Cook macaroni until it is just tender, a little underdone. Don’t cook it to normal doneness or it will overcook later.

Combine breadcrumbs, parm cheese and 2 tbsp of melted butter in a bowl and mix well. Set aside.

Reserve 1/2 cup of the cheddar cheese for the topping. Drain the macaroni and put it back in the sauce pan you had it boiling in. Add 1/2 stick of butter and the rest of the cheddar cheese and mix well. Add the eggs and continue mixing. Add the milk and some salt and pepper to taste, stirring for 3 minutes over medium heat.

Pour into a greased 8×8 baking dish. Sprinkle the 1/2 cup of cheddar over the top. Bake @350 for 10 minutes. Remove and stir. Top it with the bread crumb mixture and return to the oven for 15 more minutes. Eat.

I guarantee this beats any mac and cheese you’ve ever made before.
